monitor: DVI-D - 24-pin digital DVI
cable: 24-pin digital DVI on both sides
GPU: Sapphire with  2 x DVI-I - 29-pin combined DVI

Will the 24-pin male side of the cable connect/work with the 29-pin female on the GPU?
Or is a 24-pin <-> 29-pin cable needed here...?

The monitor and cable are DVI-D (digital only).  The video card is DVI-I (digital and analog).

If you look at the connectors, you'll see that the video card has extra slots to carry the analog signal;  the cable should simply have no pins for these and, therefore, not carry the analog signal.

Just to add something, I notice that the latest NVidia's drivers had DVI HDTV support, so I hook my 6800GT to my Panansonic AE500U HDTV Projector and it work. I had to change the projector to ESID 2 Mode.  It also work on my 5700U with the latest drivers.  I used a $200 Monster 12 ft  DVI cable.
